Brian Knight & Orry Shand

The countdown is on for the Contract Catering Awards, where Entier have been shortlisted for the Contract Caterer Award, and Executive Chef Orry Shand and Chef Manager Brian Knight have also both been individually recognised.

Before joining Entier in 2013, Brian Knight had worked as a restaurant Chef within environments that allowed him the opportunity to not only produce high quality seasonal menus, but importantly also allowed him to develop his management skills and recognise the importance of building relationships with customers and suppliers. His move from being a restaurant chef into contract catering, brought new learnings and experiences where he had to cater for a wide spectrum of tastes and needs on a daily basis. Brian also found a positive in having a steady team to work with. This stability gave him the opportunity to develop his team bringing a whole new dimension to being a manager and he recognised the payback and pride that he got from being able to see his team progress.

Brian currently works as Chef Manager on the Beryl Bravo, where he successfully brings the touches of his fine dining experiences to the meals that he produces for the crew. Being shortlisted as Unit Chef of the Year at the Contract Catering Awards is recognition of his efforts and achievements, and we wish Brian the best of luck at the award ceremony.

Orry has many accolades to demonstrate his talent, including Grampian Chef of the Year and Scottish Chef of the Year, Orry has also been competing on the international stage as part of the Scottish Culinary Team since 2015. He has led this team and invested so much in training and mentoring the team. Under his leadership they achieved their best performance to date winning two silver medals when competing in Stuttgart. His next target is competing in the Global Chefs Challenge, scheduled for May in Abu Dhabi. Since joining Entier in 2017, Orry has successfully been able to deliver a profitable kitchen which does not compromise on product, cooking, delivery or standards. He works closely with suppliers to incorporate seasonal high-quality produce into his menus and is constantly exploring food trends and innovations and identifying how these can be incorporated within the business.

Orry is passionate about supporting and developing young people and wants to instil the same passion and provide similar opportunities that he had when he was learning his skills as a young Chef. Orry ensures that our FRESH Olives learn the highest level of culinary skills and he takes great pride in being able to teach and pass on his own skills and knowledge. He ensures that they get every opportunity to be fully involved in the day-to-day operations, ensuring that they learn all aspects of their Chef role from an early stage

Overall Orry is a role model for our employees and an ambassador for the sector, making him a worthy finalist for Executive Chef of the Year Award at the Contract Catering Award. Good luck on the night Orry.

The Contract Catering Awards recognises the outstanding contributions to the contract catering industry from individuals and businesses. The event is in its 10th year and will be judged by a panel of industry professionals at the Leonardo Royal Hotel at London Tower Bridge on 29th March 2022.
