Last week our Fresh Olive's had a fantastic visit to Peterhead, St Fergus and Fraserburgh. Led by Executive Chef Orry Shand, the Olives got a one of one experience in an action packed day.

They began their day at the Peterhead Fish Market where they were given the opportunity to learn from Stephen and his brother Peter Bruce about all the fresh fish up for auction at the market, watch a live auction and ask questions throughout.


After this, the guys headed to the Sage gas terminal at St Fergus. Receiving a tour of the facilities that their fellow Chef Nikki Paterson works at. It was a great opportunity to gain insight into how the Sage kitchen runs.

This was followed by a trip over to the Fraserburgh Harbour for a tour of the 'Grateful FR 249' Vessel. Learning about the fish pumps, thruster system, refrigerated sea water system (RSW) and the breath taking control room.

The day was wrapped up with a trip to the family run Findlay's Fish Bar for some of the best fish n' chips in Scotland.

It was such an enjoyable day filled with new experiences for our apprentices!
