Here at Entier we offer a three-year award-winning Fresh Olive Apprenticeship Program, an exciting opportunity to enter the catering industry – earning whilst learning.
Here’s what Nicole, our newly Graduated Fresh Olive Chef, had to say about her apprenticeship with Entier.
My three years with the Fresh Olive Apprenticeship Program have truly been amazing. I’ve grown in confidence and learnt valuable skills whilst being supported by a fantastic team of chefs.
Before I started with Entier, I wasn’t sure what to do after school. I considered becoming a veterinary nurse, but I had a real passion for cooking and wanted to pursue this.
It was one of my teachers who told me about the program. On the day of my interview I went to the Olive House in Westhill, had an interview and completed a skills test. I was delighted to be one of the chosen candidates; starting my journey with the Entier family.
At the start of the program, I supported the delivered services division and shadowed the chefs, learning what their day-to-day roles and responsibilities were. Every day was different, and I was constantly learning new things. As my skills developed, I was given more advanced jobs like assisting with the preparation for events and FRESH catering.
As well as developing a career through the program, I was given amazing opportunities. I have competed in many competitions during my time at Entier - which are great learning opportunities themselves.
When competing in the Taste of Grampian Competition, I met celebrity chef James Martin who awarded me the gold medal. I was also awarded Fresh Olive of the Year which allowed me to go to ScotHot to support Alex Frost in the Scottish Chef of the Year category as her commis, where she was awarded third place. In 2018, I went on to compete for Young Chef of the Year and was awarded second place. Competing has been one of my favorite parts of the apprenticeship, it was very rewarding bringing the medals and awards home to the Entier team. My biggest achievement to date was receiving second place at North East Chef of the Year and gaining a place on a scholarship at Gleneagles for a week.
This apprenticeship has been everything it promised to be and more. I get to work with incredible, highly qualified and passionate chefs including; Ali MacSween (Young Master Chef); Orry Shand (ScotHot, Chef of the Year) and; Craig Palmer who is taking part in the Scottish Championship.
I’m so proud to graduate as a Fresh Olive, receiving my white chef’s jacket and Gold Olive pin, and I’m looking forward to continuing to work with the incredible team. I plan to expand my events experience and perhaps consider working offshore as a chef.
I recommend anyone who is considering applying for a Fresh Olive Apprenticeship to do it. To those starting the Fresh Olive Program I’d say grab every opportunity as you have no idea where this incredible experience can take you!
