Last night following a long day of competition and superb cook offs the results were in. The presentation in front of almost 200 fellow professionals awarded Alix her top award and to be ‘crowned’ The North East of Scotland’s Young Chef of The Year 2017 with a gold medal.
Alix wowed the industries top panel of judges with her great menu showcasing the best local quality produce from the North East’s larder.
The winning menu started with
Veal Sweet Breads, with Pea Puree, Asparagus, Confit Shallot and Lemon Grass
A show stopping main course of
Rabbit, Offal Mouse, Savoy Cabbage, Ragu and Carrot Puree
And the finale was a charming Dessert of Chocolate Souffle, Chocolate and Orange Sauce, with Tonka Bean Ice- cream and a Pastry Twist
Alix, up against stiff competition showcased her exemplary skills under pressure confirming her place in the North East’s culinary history books. The ability and techniques adopted by Alix are a testament to the Fresh Olive Apprenticeship Programme she completed with Entier.
The ‘Fresh Olive Programme’ was developed to help young employees become confident, competent and professional individuals and Alix having graduated from this programme is a shining tribute to its worth.
